Before refined sugar, there was gur — cane juice slow-cooked in open pans until it sets into dense, caramel-amber blocks. Nothing bleached, nothing stripped away: the minerals and molasses that refining removes are exactly what give real gur its depth.
Ours is traditionally made in small batches, free of the bleaching agents and chemicals common in commercial jaggery. Break a piece and you'll see the difference — a warm golden-brown inside (not pale yellow, which usually signals chemical whitening) and a clean, toffee-like sweetness.
Use it the way our grandparents did: melted into chai instead of sugar, in gur wala chawal and desserts, with roti and desi ghee, or a small piece after meals — the original way to end a Pakistani dinner.
